Our ranch-raised beef is dry-aged for 14 days prior to processing. We have four standard harvests per year: Spring, Summer, Fall, and Winter. Additional harvests are offered when our butchers have availability. We sell our Custom Beef Shares on a first-come, first-served basis and encourage you to reserve your beef early so you don’t miss out.
Our current live weight price per pound is $2.35. Our steers average 1,200lbs at harvest but the weight range is 1,000-1,400lbs depending on age, genetics, and time of year when we take them in for processing.
When an 1,200lb animal is taken in for processing, we can expect an average yield of 60%, although that can range from 57% – 61%, and a 720lb hanging carcass weight (after the head, hide, and leg bones have been removed).
The percentage of cuts yielded from a whole beef averages 48% of hanging carcass; the cut yield can range from 45-50%. For a 1200lb animal with a hanging carcass weight of 720lbs, you will receive an average of 345lbs of beef.

We are unable to ship Custom Beef Shares at this time. If you live outside of Colorado or are unable to pick up Custom Bulk Shares from our local butchers at time of harvest, we ship our 1/8th, 1/4th, or 1/2 Standard Beef Shares. every Monday and Tuesday.
Your Custom Beef Shares order must be picked up from one of our butchers. We use three butchers for our Custom Beef Shares harvests and your butcher will be listed on your order confirmation and your final invoice. Get contact information and directions for each butcher.

Our Spring harvest is taken to the butcher from mid-March to early May where it dry ages for 14 days. Pick-up dates are assigned from April to May. You will be assigned a pick-up date based on the day you place your order. Because our harvests sell out quickly, we recommend reserving your beef early. If you need to pick up your beef in one month or the other, please let us know in the Additional Information Notes section. We make every attempt to honor your selected pick-up month but it is not guaranteed.
