    You will be given the maximum number of steaks for each option. If you prefer not to add steaks, these cuts will be added to your ground beef with two exceptions – we require you to select Rib Eye Steak, Rib Steak or Prime Rib Roast and either T-Bone Steak & Porterhouse or New York Strip & Filet Mignon Steaks as these are prime cuts of beef.

    T-Bone steaks offer two times the steak in one mouthwatering cut. The strip and the tenderloin, both lean, well-marbled cuts of beef, are connected by the telltale t-shaped bone. This hearty steak is hard to resist when grilled. If you choose the NY Strip & Filet Mignon combination, you’ll enjoy two of the most tender cuts of beef. The NY Strip is a steakhouse classic is known for its unmistakable marbling and flavor while the Filet Mignon offers succulent flavor. We recommend grilling, broiling, or braising both cuts for optimum flavor.

You may choose to have 15lbs or more of your ground beef processed into patties.
    TIP:
    Quarter Beef: Typically, you will receive 30lbs of 90% lean ground beef and 3-4 packages of stew meat. Half Beef: Typically, you will receive 65lbs of 90% lean ground beef and 6-8 packages of stew meat. Whole Beef: Typically, you will receive 130lbs of 90% lean ground beef and 12 – 16 packages of stew meat.
  • Let us know how many pounds of ground beef and stew meat you’d like to thaw for each meal.
    TIP:
    While the pounds of ground beef and stew meat per size of beef varies, we need to know how much beef you want to thaw at one time.
  • A minimum of 15 pounds of ground beef is needed for Ground Beef Patties. Patties come 4/package and are 1/4 lb each.
    If patties are selected an additional charge of $1 per pound will be applied.
    TIP:
    If you would like patties, we require a minimum of 15lbs of ground beef. Patties come four to a package. If you have ordered a Quarter Beef, 15lbs of ground beef equals at least half of your total ground beef. There is an additional processing fee for patties; we will note this on your invoice.
  • If you and a neighbor or friend would like to coordinate pickup up your beef on the same date, please include their full name so we can keep your orders together.
  • We love when our customers refer their friends and family! To show our gratitude, we offer a $15 discount for each new customer you send our way.
  • We now offer payment plans for our Custom Bulk Beef Shares so you can split your total cost into three payments after you pay the initial deposit. It’s the perfect way to enjoy a freezer full of naturally raised, premium beef from ranchers you know and trust!

    Payment installments will be split into three equal parts based on the date of your order and the date of your harvest.

    Your payment plan will be based off an estimated, average-weight beef animal. Your final invoice for your beef will include the actual costs for your animal, should your animal weigh more or less than an estimated, average-weight beef animal. Invoices will be sent to you via Quickbooks.

    Full payment for your beef must be received before you can pick up your beef from the butcher.

Kathy and Kirsten broke out all the craft supplies this afternoon and are busy assembling bags of our Colorado Beef Jerky for the Farm Credit Fly-In Marketplace. We had an amazing time getting nearly the whole fa We had an amazing time getting nearly the whole family together to celebrate our Centennial Ranch designation! Not only was it wonderful to see everyone, it was also neat to show our family just how much things have changed here at the ranch over the past few years. Eric fired up the 1936 B John Deere and everyone piled on the trailer for a hay ride to check out our new freezer and packing building (the big reveal is coming soon!). Even though much has changed, especially with the explosive growth of our branded beef program, many of the original buildings and facilities are still in place and it was neat to hear family members tell stories about how each building, section of fence, and feed bunk was built. 
 
Eric smoked a Christensen Ranch brisket – always a family favorite – and we enjoyed hours of laughter, retelling of favorite family stories, and time spent making new memories. It was the perfect way to celebrate with our family and friends and we’re thankful so many made the trip out to the ranch to share in this milestone with us.
 
We’re also so thankful for the foresight of our grandparents, Ed and Mary, to create a ranch that can be passed down generations and we’re looking forward to seeing what the next generation has in store. Fall may have arrived but we are still just as bus Fall may have arrived but we are still just as busy on the ranch. This morning Eric started irrigating up a new seeding of Alfalfa that we planted about three weeks ago. Today was the first time we needed to irrigate this field all year because of the triticale in rotation and the excellent moisture in the Spring and early Summer. Now the window for rain has come and gone which means it's time to get to work setting some irrigation tubes. They're another favorite bloom of bees and butterflies and, because these plants flower when others wither away, they provide late season energy for our winged friends.

Last week we had to move our bulls back to the yard for a much needed break before they go back out with our fall herd here in a couple of months. Moving these big guys was a bit of a project, as the 5 mile trek home was a bit tiring for some, and we had a couple of bulls try their best at finding a way to get us to stop following them! Cute is an understatement when it comes to calves Cute is an understatement when it comes to calves in a pasture full of grass! While twins aren't uncommon, we have had three sets in our fall herd this year which is definitelyunusual. When a cow has twins we try to give them a chance to keep their calves but it is rare that they are able to care for both calves. That's a wrap for hay season here on the ranch! To That's a wrap for hay season here on the ranch! Today we finished chopping our last cutting of alfalfa into haylage to be used for cow feed. We now allow the alfalfa to put on as much growth as possible through the end of the growing season to allow our cows to have something to graze over the winter. It's now time for some much needed maintenance and switching of header parts to prepare the cutter for corn harvest. When we're out checking the cattle and pastures, w When we're out checking the cattle and pastures, we sometimes stumble upon some vegetation we'd rather not see. This Canada Thistle (𝘊𝘪𝘳𝘴𝘪𝘶𝘮 𝘈𝘳𝘷𝘦𝘯𝘴𝘦) is an especially aggressive, creeping, perennial weed that can easily infest crops and pastures. It reduces forage consumption in pastures because cattle will typically not graze near it. It's one more weed that we have to work hard to eliminate from our pastures.

Charlotte and her friends have moved into the feed Charlotte and her friends have moved into the feed shed and taken over! Some might get the heebie-jeebies from this post, but barn spiders are mostly known for their distinct orb-woven webs. The only real threat is getting clotheslined by a string of cobwebs! Each time we check cattle in the pasture, we come Each time we check cattle in the pasture, we come across even more native vegetation that is in full bloom - the rains have certainly been beneficial for all vegetation this year! The Purple Vetch (Vicia Americana) flowers from May to August and is drought tolerant. Although that's not an issue this year,  it's always nice to have plants growing in the fields that can handle excessive rain and arid drought conditions. Thankfully, we have had a fairly cool and wet summer, so irrigation has been slightly above supplemental during the last half of the season. These floater pumps may seem like a bigger nuisance to repair when out on the lake.
