All your cuts of beef will be vacuumed sealed to keep your beef fresh for a minimum of one year.
Our Summer harvest is taken to the butcher from mid-May to early July where it dry ages for 14 days. Pick-up dates are assigned in July. You will be assigned a pick-up date based on the day you place your order. Because our harvests sell out quickly, we recommend reserving your beef early.
Fill your freezer with your favorite cuts! You can choose your steak thickness, roast size, pounds of ground beef per package, and add specialty cuts like Prime Rib, Brisket, Organ Meat, and more when you order a Custom Quarter Beef Share!
Our ranch-raised beef is dry-aged for 14 days prior to processing.

Average Cost for a Custom Quarter Beef Share $700-$800
Average Processing Fees for a Custom Quarter Beef Share $200 – $260
These costs are based on an average-sized steer. Your cost may vary based on the weight of your animal, the butcher used for your harvest, and the cuts you select. Cuts with additional processing fees are noted in the order form.
We are unable to ship Custom Beef Shares at this time. If you live outside of Colorado or are unable to pick up bulk beef from our local butchers at time of harvest, we ship our 1/8th, 1/4th, or 1/2 Standard Beef Shares. every Monday and Tuesday.
