Eric has been away from the ranch for a little more than a week, having a little fun fishing in Canada with some of his fraternity brothers from college. He traveled to Minneapolis before joining the rest of the guys and driving to the northern region of Manitoba in search of a Northern Pike. Eric was able to email us these pictures of him reeling one in after they arrived back at their fishing lodge. What a catch! As we get ready to debut a couple of new collections of boxed beef, we wanted to highlight the unsung hero of these two collections, which is Christensen Ranch stew meat! Last night, we tried a new Kabob marinade that was super easy to whip out in the morning or about 12 hours before dinner! Many people tend to turn away from the term "Stew meat" on their cut sheets or boxed beef collections. The reality is that some store-bought stew meat packages can utilize lesser-valued cuts that are tough to chew on. The difference in our cuts is the tenderness and flavor of what we have dubbed #Steakbites as opposed to just plain 'ol stew meat. Kabobs are hands down one the best way to cook your stew meat. We also opted to include some surf with our turf, adding in some Jumbo shrimp to the skewers, and with the help of Allie's DIY Marinade she whipped up, these #Kabobs were a hit! 🥩🔥

Kabob Skewers Beef Marinade (feeds 6-8)
• 1 and 1/2 Cups of Olive Oil with #ChristensenRanchSteakSeasoning to Taste (coat lightly before grilling)
• Four packages of #ChristensenRanchStewMeat
• 1/3 cup soy sauce
• 2 tbsp lemon juice
• Three cloves chopped garlic
• Add freshly chopped parsley, salt, and pepper to the shrimp and veggies after placing on the skewer. Continue to season with Christensen Ranch Steak Seasoning to preference while grilling.

"This is my 3rd year in a row getting a 1/4 cow from Christensen Ranch. Quality tasty beef!! Nice marbling on the steaks and probably some of the best tasting ground beef I have ever had. The corn finishing and aging really makes a difference. The butcher, Stagecoach in Wiggins, has been improving their packaging process this last year. Now all my beef is vacuum sealed. It's just been one of those weeks on the ranch, if you know what we mean! During chores, one of the guys came upon a line of dead cattle walking back toward the water tank while out driving the pasture. We identified a cluster of Suckleya plants that poisoned the animals near a few low-lying areas where runoff can collect down a few draws. We spent the rest of the day moving the herd into a different portion of pasture without as many low spots for the Suckleya to thrive in based on this season's weather patterns.

Suckleya is actually an annual herb that is related to common succulent houseplants. It is commonly known to bloom from July to September in our region and loves to sprout in dry lake bottoms, fields, valleys, and along creeks or ditches. However, this is the first time we have had a run-in with the plant impacting the cattle. This morning, we woke to an early morning thundershower; we don't get that treat often in Colorado! Drought conditions have slowly started to creep back into our area, with all of the dry weather and heat adding to the crop stress. It makes the rain more than welcome! Our pastures are the most thankful for the moisture, with the rain coming down steadily for a few hours before clearing out. We had another trip down the riverside ditch last weekend for #SundayFunday, this time along with a stock tank! This past weekend was a scorcher, and we nearly opted for a day spent in the AC. However, it's not every day you can be in a parade for cows, as opposed to a parade of cows! Happy Independence Day everyone! We are spending the day partaking in one of our favorite summer pastimes, tanking or, in this case, floating in the riverside ditch! That stubborn bull Eric was fighting with last weekend gave us the itch to float on the 4th today. This stretch of the canal runs through the southern end of our West pasture and loops around a little more than two miles from our starting point at the west end to our rope swing on the cottonwood we call the finish line; it takes roughly four hours to reach the end where we can quickly get out. We even had an audience from some of the fall cows coming to check things out as we soaked in some sunshine. #Happy4thofJuly #Floatin 🇺🇸🐂🇺🇸🐂

Eric and his horse, Forrest, had quite the adventure last weekend. We somehow managed to get the neighbor's bull in with Eric and Jodi's herd and Eric and Jodi's bull in with the neighbor's herd! We don't know what these fellas did to warrant their exile from their regular gals, but both seemed pretty content in their newfound homes and didn't want to return to where they belonged. After some encouragement from Forrest, our bull thought he could lose the cowboy in the ditch, nearly forcing Eric to bail from his saddle.
