A little over a week ago Jeff and Helen welcomed Simon to their herd, and we couldn't be more excited to have this colt running around! This cutie got turned out for the first time a few days ago, and is having no trouble finding out how to use those long legs of his. While we think all of the calves running around are pretty cute, it is a nice change of pace to see this little one out and about as the warmer weather is rolling in.

Kathy is back talking about the Flatiron Steak, also known as a Top Blade or Butlers' Steak, which comes from the Chuck Primal, as Gerald so kindly showed us! While this cut is considered lean, there is still consistent marbling throughout the cut. The Flatiron Steak comes from the second most tender muscle in the body, making it a perfect steak for the whole family to enjoy!

We are slowly working our way through the various cuts of meat we offer, so stay tuned as Kathy and Gerald continue to share their knowledge about the characteristics of each cut!

While this weekend's forecast doesn't call for good farming weather, Earlier in the week, Kirsten started in the 8200 and our stalk chopper. The corn fields that we harvested as earlage at the end of last fall are used for late winter grazing. The forage harvests only the ears, leaving behind a large portion of the plant. We received another rave review from one of our loyal followers and customers! Rocky Theunissen shared a photo of the Christensen Ranch Brisket he smoked this past Sunday. According to Rocky, it stems from a 12-hour pit boss recipe with some customization to preference! 🔥

"That's pretty much it with mustard, black pepper, and salt; smoke at @250°F until internal temp is 160°F, wrap with butcher paper, and continue at 250°F until internal temp reaches 195°-200°. Then let rest for an hour wrapped... Well, if it isn't Springtime in Colorado! 🌬️🍃 Mother Nature decided to get a little crazy with us over the weekend with the wind. While irrigation season hasn't fully kicked off, the tumbleweeds blown into the canal have become a nuisance to the recharge pond inlet and the instruments used to measure the water. If one bunch floats down the canal and begins to dam up the headgates or even the main waterway, it can lead to a lot bigger problems. Christensen Ranch had an amazing day at the Mounta

Christensen Ranch had an amazing day at the Mountaintop Tasting at the @tasteofvail yesterday afternoon. We provided the Brisket and Short Ribs that were cooked by various Chefs throughout the state. We were only able to snag a few pictures of @thehythevail, @fsvail, and @mobeagleco Moe's Original BBQ - Eagle, CO while they were at their tents, but we were very impressed with the 10 others who were also cooking our beef! The turnout for this event was absolutely incredible, and we were thrilled to see how many different ways you are able to cook these cuts.

While we were excited to sample the extensive variety of wine, whiskey, and good food, we also enjoyed meeting with individuals from all around the country at our booth. We not only got to share our beef with all those who attended, but we were lucky enough to share a little part about who we are and what we do. The wind, however, took a little bit of a toll on our artistic abilities, forcing us to use rocks and duck tape to anchor down our flyers and posters!

One of the best parts of our day was meeting a long-time customer, Brad Farans, who took the time out of his day to come introduce himself. It is always a pleasure for us to meet those individuals who continually support our business and believe in our product!
