Our ranch-raised beef is dry-aged for 14 days prior to processing. We have four standard harvests per year: Spring, Summer, Fall, and Winter. Additional harvests are offered when our butchers have availability. We sell our Custom Beef Shares on a first-come, first-served basis and encourage you to reserve your beef early so you don’t miss out.

These costs are based on an average-sized steer. Your cost may vary based on the weight of your animal, the butcher used for your harvest, and the cuts you select. Cuts with additional processing fees are noted in the order form below. Please see our FAQs for more information.

Our steers average 1,200lbs but can range between 1,000-1,400lbs depending on age, genetics, and the time of year when they’re taking in for processing.

  • Quarter Beef Share: You will receive 80-110lbs of beef, depending on the actual weight of your animal.
  • Half Beef Share: You will receive 160-220lbs of beef, depending on the actual weight of your animal.
  • Whole Beef Share: You will receive 320-440lbs of beef, depending on the actual weight of your animal.

A 1,200lb animal has a hanging carcass weight of 720lbs, after the head, hide, and leg bones have been removed. The number of cuts yielded from a whole beef averages 48% of the hanging carcass weight for an average of 345lbs of beef.

 

We are unable to ship Custom Beef Shares at this time. If you live outside of Colorado or are unable to pick up bulk beef from our local butchers at time of harvest, we ship our 1/8th, 1/4th, or 1/2 Standard Beef Shares. every Monday and Tuesday.

Your Custom Beef Shares order must be picked up from one of our butchers. We use three butchers for our Custom Beef Shares harvests and your butcher will be listed on your order confirmation and your final invoice. Get contact information and directions for each butcher.
