This picture, according to Eric, shows a perfectly This picture, according to Eric, shows a perfectly marbled steak-and it just happens to be his favorite cut, the New York Strip. 😋🥩

Marbling refers to those thin streaks of intramuscular fat running through the lean muscle of a steak. When cooked, that fat melts, adding incredible flavor, tenderness, and juiciness. This beautiful marbling comes from well-fed, healthy cattle with slow, consistent growth-most often achieved with grain-finished beef raised on a controlled diet and environment. Those tiny white flecks of fat are what create that rich, buttery flavor we all crave in a great steak.
As much as he’d love to throw this beauty on the charcoal grill, Mother Nature had other plans for the evening.

Not only did all of the cows and calves cooperate as we moved them through different pastures, but they made weaning pretty easy on us this year! After weaning, the Momma Cows were moved back over to our east yard, and turned out to corn stalks for the next few months!

Every morning we have someone walk through each of Every morning we have someone walk through each of our pens to check the health of our animals. While looking at each steer and heifer, we look for any that may be feeling under the weather or are not up at the bunk ready to eat after we finish feeding. This helps us pick out any that are sick and need extra attention.

Getting fence up means that the calves we've been Getting fence up means that the calves we've been getting in over the past month in the feedlot get some turn out time. This is not only great for them to get out of their pens that can be dusty this time of year, but it also allows them to get some exercise and help get over any sickness that is starting to go around. Turning them out tends not to be very exciting, as they spend the day hanging out, but it is nice to see them enjoying the sunshine while they graze.

With harvest coming to a close, it means it is tim With harvest coming to a close, it means it is time to get electric fence put up around the fields and get them ready for cows to be turned out on for the winter. Jeff spent the morning rolling out wire, and spent his afternoon putting in the last of the posts and making sure the fence is hot and ready for calves to be turned out on.

Cleaning the stock trailer is one of the least fav Cleaning the stock trailer is one of the least favorite, but absolutely necessary, maintenance jobs on the ranch.
It’s best done on a day when the temperature is in your favor, because it can get messy fast. It definitely makes a bit of a disaster in the yard, and we’re still working on finding a better spot to tackle this project. Just one of many messy, but important, jobs that keep the ranch running!

We got ourselves an early Christmas present here o We got ourselves an early Christmas present here on the ranch! One of our cousins who had a ranch in Wyoming decided to move back to the area, which means he was getting rid of a few things and we thought it might be nice to have an extra loader around for busier times throughout the year. While we do have a second loader that doesn't get used much, it has been on its last leg for a while, and hasn't had brakes in close to a decade. With the opportunity to upgrade, we figured it was about time to have a more reliable backup!

Just in case anyone missed seeing pictures of the Just in case anyone missed seeing pictures of the Northern Lights here in Northeastern Colorado over the past week, we thought we'd share a picture we got of the lights with our cows turned out on corn stalks. Since we don't get to see the lights often, we figured catching a few pictures was well worth hanging out in the cold!

If you know what we're doing, then you know 2025 c If you know what we're doing, then you know 2025 corn harvest has officially come to a close! To finish up earlage harvest and make sure that the crop we spent over a month getting put up remains at its best quality, we have to cover it in plastic and keep that anchored down with tires. The whole crew gets a good workout in carrying and throwing tires, but having the skid steer this year did lighten the load a little!
